Hot Chocolate Cake™

Ingredients


  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 3/4 cup butter
  • 1 cup of coffee (instant or decaf okay)
  • 1/4 cup dark unsweetened cocoa
  • 1/2 cup buttermilk
  • 2 eggs
  • 1/3 cup Spiceitup! Jalapeno Ketchup (Hot)
  • 1 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla

Preheat oven to 350°F (176.7°C). Butter up your 9-by-11 inch baking pan with butter or squeezable margarine. In large mixing bowl, blend all dry ingredients including flour, sugar, baking soda and cinnamon. In a sauce pan heat and combine margarine, shortening, coffee and cocoa with a whisk. After mixture has boiled, combine with dry ingredients and add eggs, Spiceitup! Jalapeno Ketchup, buttermilk and vanilla and beat with whisk or electric mixer until thoroughly combined. Pour into buttered pan and bake for 20 minutes. Remove and let cool for at least 30 minutes while you're making the frosting.


In a larger sauce pan combine:


  • 1 stick of margarine
  • 1/4 cup milk
  • 2 tbsp dark unsweet cocoa
  • 1 tsp vanilla
  • 1/4 cup Spiceitup! Jalapeno Ketchup (Med)

After these are heated and mixed then take off stove and mix in 3 1/2 cups of unsifted powdered sugar. Blend frosting until smooth. Pour onto cake after frosting has cooled somewhat but is still pourable. Use a spatula to remove the last drops. Let frosting become solid and cut into party bites to thrill the crowd or get some ice cold milk and pig out.
