Gazpacho
Texas Style
1 can of tomato soup
1 can of chicken broth
juice of a large lemon & zest
2 large cloves of garlic, crushed
3 oz lime juice
3 tbsp Worcestershire sauce
wine or balsamic vinegar, to taste
1/4 to 1/2 cup Spiceitup! Jalapeño Ketchup
6 large green onions, chopped
large cucumber, chopped (no seeds)
1 cup celery, chopped
1 avocado, chopped
sliced black olives
green pepper, chopped
chopped tomatoes, use diced canned tomatoes if fresh are unavailable
Heat tomato soup and mix in the chicken broth. Let the mixture cool,
then add all other ingredients. You can add a bit of sugar if it's too
acidic and add V8 if it's too thick. Chill overnight and serve with
garlic bread or croutons.
