Chili Rice
1-1 1/2 lbs lean ground beef
1/2 yellow and red bell pepper
1 medium sized onion
4 tbsp cumin
1 tbsp salt
1 tbsp chili powder
1/2 cup Spiceitup! Jalapeño Ketchup
1 (6 oz) can tomato paste
1 (8 oz) can tomato sauce
2 1/2 cups instant rice
4-8 cups water, depending on preference
1 (10 oz) can diced tomatoes and green chilies
In large cooking pot brown ground beef and chop fine. Drain grease or
use some folded paper towels to soak up grease and dispose. Food
process onion and bell peppers and add to the cooking hamburger, stir
and cook for 2 minutes. Add dry spices and combine thoroughly while
cooking. This is great aroma therapy! After 2 minutes begin adding
tomato sauce, paste and diced tomatoes and mild Spiceitup! Jalapeño
Ketchup. Add water, one cup at a time, and dissolve tomato paste. Add
rice, bring to a boil, turn burner on low and let simmer 30 minutes.
Add water if it's too thick or add rice if it's too thin. Stir every
3-5 minutes. Salt and pepper to taste. Serve with corn chips,
crackers, melba toast, toasted halves of croissant rolls or whatever
thrills your heart. Enjoy with some pickles and olives.
