Spicy Stir Fried Fish

  • 1 lb fresh or frozen fish fillets
  • 4 tbsp corn starch, split use
  • 1 sweet green or red pepper
  • 1/4 cup honey
  • 1 (15.25 oz) can pineapple chunks
  • 1/4 cup soy sauce
  • 1/4 cup Spiceitup! Jalapeño Ketchup
  • 2 tbsp vinegar
  • 3 tbsp canola or cooking oil
  • 2 1/2 tbsp sherry
  • 4 servings of white rice

Thaw fish if neccessary. Cut into 1 inch pieces and coat with 3 tbsp corn starch and set aside. Dice red pepper into 3/4 inch cubes and set aside. Drain pineapple and combine pineapple juice with 1 tbsp corn starch. Stir in soy sauce, honey, Spiceitup! Jalapeño Ketchup, vinegar and sherry. In a wok or hot skillet cook fish in canola one minute on each side. Remove fish and stir fry pepper cubes for 2 minutes and remove.
