Seafood Gumbo

  • 1/2 cup celery, sliced
  • 1/2 cup onion, chopped fine
  • 1 clove garlic, minced
  • 1/2 cup bell pepper, diced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp vegetable oil
  • 13.5 oz can chicken broth
  • 1 bay leaf
  • 1-1/3 cup cooked rice, hot
  • 14-16 oz can diced tomatoes
  • dash of hot sauce
  • 1/4 tsp dried thyme
  • 2 cups fresh or frozen sliced okra
  • 3/4 cup Spiceitup! Jalapeño Ketchup
  • 1 lb white fish fillets, cut into 1 inch pieces

In 3 quart saucepan, sauté celery, onion, bell pepper and garlic in oil until crisp-tender. Add broth, tomatoes, okra, Spiceitup! Jalapeno Ketchup, spices, bay leaves and dash of hot sauce. Mix, cover and simmer 20 minutes. Add fish, stir and simmer, covered 15 to 20 more minutes. Remove bay leaf. Place 1/3 cup rice in each bowl and cover with gumbo.
