Onion Rings

  • 6 mild onions
  • 1 1/4 cup sifted all purpose flour
  • 1/2 tsp salt or garlic salt
  • 1 slightly beaten egg
  • 1 cup buttermilk
  • 2 tbsp cooking oil
  • Oil for frying
  • Spiceitup! Jalapeño Ketchup

Cut onions into slices 1/4 inch thick and separate into rings. Place flour in brown paper sack. Combine remaining ingredients. Flour onions, then dip in egg mixture and back into flour. Fry, few at a time in deep hot oil at 375°F (190.6°C) stirring once with fork to separate rings. When rings are golden, drain thoroughly on paper towels and sprinkle with salt. Don't forget to dip these in Spiceitup! Jalapeno Ketchup!

Variation: Mix 1 tsp of minced onion with meat and rice. Brown the meatballs in skillet with 1 tbsp of bacon fat or oil then add boilingVariation: Instead of 1 cup buttermilk, use 1/2 cup buttermilk and 1/2 cup beer for beer batter.
